The deer is prey. It has no attack at all: when it notices you at 32 metres it turns and runs, and the whole of hunting one is closing the distance before it reaches the edge of its range and vanishes. With 5 health most weapons take it down in a hit or two.
Every deer gives up exactly one hide — nine times in ten a torn scrap hide, the tenth a clean animal hide. On top of that, about half of kills leave a deer carcass, and a good many leave deer hoof, up to four at a time. Deer antler turns up less often and bone is rare, which is why a run of deer can leave you with none.
That carcass is the reason a butcher wants deer: it becomes a venison portion. The hides are the reason a ranger does — five scrap hide make one animal hide at the leather tanner, and that hide runs through again for prepared hide. Bone becomes knife and sword grips at the weaponcrafting table.
Only a ranger earns CXP, 2 for a deer, though anyone at all can loot the body. A party shares the kill between everyone who damaged it, which in practice rarely applies here — a deer does not usually survive long enough for a second hunter to land a hit.
Set several respawn points around your region and each kill sends the deer to one of them at random, so nobody learns the spot and camps it. It comes back in about three hours.
